Scientists have believed that the amount of polyphenols is high in purple-colored fruits and vegetables. A special class of polyphenols—anthocyanins—is responsible for giving red, orange, blue, or purple colors to foods. Another study published in NCBI showed that eating foods rich in anthocyanins, especially berries, lowers the risk of type 2 diabetes.

Anthocyanin is found in purple-colored things

Elderberries, blackberries, and blackcurrants mainly contain nonacylated anthocyanins, according to the study, while acylated anthocyanins are found in red radishes, purple corn, black carrots, red cabbage, and purple sweet potatoes, and grapes.

Purple-colored foods work to increase insulin

In a study on mice, researchers found that non-acylated anthocyanins derived from black rice increased certain bacteria in their gut, including Akkermansia muciniphila. muciniphila was shown to have the ability to increase insulin secretion and improve glucose metabolism in rats with type 2 diabetes.

Acylated anthocyanins, found in foods like purple sweet potatoes and grapes, increase good bacteria in the gut and inhibit the growth of bad bacteria. It keeps them healthy by increasing the production of fatty acids in the intestines.

In the study, researchers gave mulberry juice to diabetic rats for two weeks. Nonacylated anthocyanin is found in mulberry. They found that after two weeks their blood sugar levels were about 30% lower.
